California Loligo Squid

 

California Loligo has a firm and chewy texture with mild flavor. California coastal areas are the major source of Loligo Squids and a variety of processed Loligo Squid products.

In Central California, Loligo Squids are avail- able from May through September, followed by the Southern California catching season from No- vember to March. Average size of California Loligo ranges from 6 to 15 grams.

Dungeness Crab

 

Dungeness crab has a sweet, delicate, “stand alone” flavor. Their Leg meat is firm and white with pinkish tones. Body meat is white and flaky. They are versital in a many seafood dishes.

The annual harvest of Dungeness crabs begins on December 1st, and closes on August 14th. Northern California, Oregon, and Washington coasts are major crabbing areas. Average sizes of Dungeness crabs are between 500 grams to 1500 grams.
